What started as a weekend hustle turned into Miami's most-followed food truck.
Founders Carlos and Luisa saved for two years to outfit a 1998 step van with a flat iron, a smoker, and a dream. They launched Fuego Ruedas in 2021 at a Wynwood parking lot with 40 birria tacos. They sold out in 90 minutes. Today they run two trucks and a catering operation, but the recipes — and the fire — are exactly the same.
